Homemade Holiday Cookies
in a Heartbeat

(December 12, 2003) About fifteen years or so ago, I had a
dear friend, Nancy, who lived up the street from us on Iselin
Terrace. Nancy welcomed us into her home for Christmas dinner
and introduced us to some of the wonderful traditions we had
never experienced in our Jewish home. One of these lovely
customs is the baking of endless varieties of holiday cookies.
Nancy served these wonderful pecan cookies one year at a
friend’s last minute party.
These cookies are made of ingredients that are always in
the cupboard, they take only a few minutes to prepare and
then a short time in the oven. For all these reasons, but
especially for their scrumptious taste, I am sure that these
cookies will become a holiday tradition in your home, no matter
which holiday you celebrate.
NANCY’S PECAN COOKIES
1 & ½ cellophane packages graham crackers
2 sticks unsalted butter
½ cup white sugar
1 cup chopped pecans

Preheat the oven to 350 degrees.
Line a shallow cookie sheet with aluminum foil. Separate
the graham crackers into individual pieces and line edge to
edge on the cookie sheet.
In a large glass measuring cup, melt the butter in the microwave
for about 45 seconds. Stir in the sugar and microwave on high
for 2 minutes. Stir in the pecan pieces and pour evenly over
the graham crackers. Bake for 17 minutes. Allow to cool and
then break into cookies.
